Servings : 30 pieces

Ingredients

  • 15 medium-sized bananas of your choice (peeled and halved)

  • 60 g (4 tbsp) rice flour

  • 60 g (4 tbsp) self-raising flour

  • 60 g (4 tbsp) corn flour

  • 1/2 tsp baking soda

  • 1/2 tsp turmeric powder (optional)

  • 1/2 tsp salt or to taste

  • 1 tbsp sugar or to taste

  • 200 ml cold water

  • 3 tbsp hot cooking oil

Method

01 In a large bowl, mix the 3 types of flour, baking soda, turmeric powder (if using), salt, sugar and the cold water. Mix well until a runny batter is formed. Set aside for 10 mins.

02 After the batter is rested, heat enough cooking oil for deep frying in a wok/pot. Scoop out 3 thsp of the hot cooking oil and mix into the batter. Mix till smooth.

03 When the oil is hot, reduce heat to medium.

Dip the sliced banana pieces into the batter. Coat evenly and slide them into the heated oil.

Deep fry until golden brown, flipping one or two times to brown them evenly. Do not crowd the wok/pot. Deep fry in a few batches until done.

04 Remove from the oil and transfer to a plate lined with paper towels.

Transfer to your serving dish.

Serve hot with your favorite beverage.

Notes

We used Pisang Awak (picture at My Pantry) but you can use any bananas of your choice. The bananas should be very slightly green and the flesh still firm. Do not use over ripened bananas for best results.

You can use the same batter to fry up peeled and sliced sweet potatoes to make Ubi Goreng/Sweet Potato Fritters.
