Green Pea Cookies

Today's COOKIE RECIPE is becoming a favorite in our family. Green Pea Cookies is quite a recent creation, not to be confused with the traditional Green Bean Cookie/Mung Bean Cookie/Lek Tau Peah. Green Pea Cookies are made from ground deep-fried green peas (normally the flour is a brighter green) not mung bean flour (normally whitish in color). Try the recipe...they are quite similar to Peanut Cookies.

Yields : 60 cookies (2 cm or 3/4 inch diameter)


Ingredients

  • 155 g (1 cup) green pea flour (ground deep-fried green peas)

  • 125 g (1 cup) plain flour

  • 70 g (1/3 cup) icing sugar

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 9 tbsp peanut oil/any vegetable oil

  • a pack of deep-fried green peas snack for topping

  • 1 egg yolk for egg wash, lightly beaten (optional)

Method

01 Preheat oven to 180C/350F. Line a baking tray with parchment paper.

02 Combine all the dry ingredients (green pea flour. plain flour, icing sugar, salt, baking powder) in a mixing bowl. Mix well with a hand whisk.

Gradually mix in the oil (2 or 3 tbsps at a time) and knead with your hands until a soft dough is formed. The dough should be just moist and comes together without falling apart. Add a little more oil if necessary if it is too dry.

03 Pinch a bit of dough with your fingers (about a teaspoon) and mould with your hands to form little balls.

Place them on the baking tray and press a green pea into the center of the ball. Repeat with the rest of the dough and brush with egg wash if using.

04 Bake in the oven at 180 C/350 F for 15-20mins. Remove and let them cool on the tray.

Store in airtight containers. They will keep for up to 4 weeks at room temperature.


Notes

If you find it hard to obtain the green pea flour, just purchase the deep-fried green peas snacks and put them in the food processer/blender. Blitz till fine. Remove and use as per recipe.
We did not egg wash our Green Pea Cookies as we prefer ours to have the green hue. If you egg wash them, they'll be brownish green.
