Homemade Tapioca (Cassava) Chips

Here’s the RECIPE for Homemade Tapioca (Cassava) Chips. If you can find fresh tapioca (cassava), make these at home for your family snacking time. Season with salt or sugar. You can even add cheese powder or salted egg powder or spice them up with sambal seasoning or curry powder. We sprinkle ours with fine salt and paprika powder.

Servings : 3 tubs ( 9 cm/3.5 inch diameter x 11 cm/4.5 inch height )


Ingredients

  • 1 kg (2.2 lb) fresh tapioca (cassava), peeled and sliced

  • enough oil for deep frying (4 to 5 cups)

  • your choice of seasoning powder: salt, sugar, paprika, cheese powder etc

Method

01 Clean the tapioca (cassava) and chop to shorter lengths for easy handling. Make a slit lengthwise and remove the outer bark plus the inner peach or pink color skin. If the tapioca has the inner vein, half them lengthwise and remove the vein. Soak the peeled tapioca in water for 30 mins.

02 Drain and pat dry on kitchen towels. Slice into thin pieces with a mandolin. Or if you have mad knife skills, use a sharp knife and slice to preferred thickness. Thin slices will yield crispy chips.

03 Heat the cooking oil in a wok/pot. When the oil is hot, reduce heat to medium.

Gently place a batch of the sliced tapioca pieces into the heated oil. Do not overcrowd the wok/pot.

Deep fry till golden brown, stirring for even browning.

Remove and place on wire rack to drain off excess oil.

04 Place cooled chips in a large sandwich bag. Sprinkle your favorite seasoning. Shake a few times.

Remove and keep in a lidded airtight container.

Will keep for up to a week at room temperature but they usually disappear very quickly as they are addictive.


Notes

Fresh tapioca (cassava) with softer flesh are easier to work with. If the tapioca you bought has firmer flesh, soak the peeled tapioca a little longer to soften them further for easier slicing.

You can also use the mandolin and slice the tapioca directly into the heated oil to deep fry them.

You can use an air fryer to make these chips. In our opinion, they are not as crispy but edible.

This same recipe can be used for homemade arrowroot chips, sweet potato chips, carrot chips etc
