Jeruk Betik Muda/Pickled Young Papaya is a delicious and addictive treat. It's pretty easy to make, here's the RECIPE.

Ingredients

  • 300 g (3 cup) young unriped papaya; peeled and sliced thinly

  • 2 tsp salt

  • 500 ml (2 cup) water

  • 100 g (1/2 cup) granulated sugar or to taste

  • 120 ml (1/2 cup) rice vinegar/apple cider vinegar

  • 6 bird's eye chillies, sliced

Method

01 Put the sliced young papaya in a large bowl with the salt. Mix well and set aside for 4 hours.

02 After 4 hours, wash away the salt. Drain and wash a few times. Soak in clean water for 15 mins.

03 In a wok/pan, boil water with sugar, vinegar and the bird's eye chillies. Simmer for 10 mins.

04 Drain the soaked sliced young papaya in a colander. Tap to remove excess water. Add to the pickle solution in the wok/pan. Cook for 5 mins.

05 Remove from heat and set aside to cool.

Store in clean, dry glass or porcelain jars in a cool, dry place or the refrigerator. Can keep up to 2 weeks at room temperature and up to a month in the refrigerator.


Notes

Best served after pickling for 3 days. Consume within 2 weeks.

Green skinned young(unriped) papayas were used in this recipe. You can also replace with green skinned young mangoes, if preferred.
